I do not own a pizza stone, not yet... if I weren't so tired from traveling I would be out on the hunt for a great pizza stone right now rather than writing tonight. I just had this pizza (actually it was one of 4) this week in Atlanta at Ecco. All four were excellent but the one the lingers is the pecorino, riccotta, arugula with preserved lemon. I have never tasted anything quite like this. I tend to stick to the tried and true flavors of a pizza. I am not someone who likes my pizza with unusual items but this was amazing and it was the preserved lemons that gave it a summer zing. Combined with the cheese and my favorite arugula, it was to die for! It was a great restaurant, everything was delicious, lots of fun to share, our server did not rush us, we ordered as we went along until we were filled to the brim!
Let me know if any of you have any thoughts on pizza stones and which is the best. It is on my to do list this weekend!
